{"id":154,"date":"2018-06-25T15:31:51","date_gmt":"2018-06-25T19:31:51","guid":{"rendered":"http:\/\/sayre-nc.info\/annsrecipes\/?page_id=154"},"modified":"2019-10-11T16:43:35","modified_gmt":"2019-10-11T20:43:35","slug":"blueberry-pound-cake","status":"publish","type":"page","link":"https:\/\/sayre-nc.info\/annsrecipes\/recipes\/desserts\/cakes\/blueberry-pound-cake\/","title":{"rendered":"Blueberry Pound Cake"},"content":{"rendered":"<p>My friend Sandy Milford made this for bridge and I think all of us wanted the recipe.\u00a0 There is a &#8216;lite&#8217; version, but my opinion is that all the chemicals added to reduce fat in cream cheese and butter are worse for you than the milk fat they replace.<\/p>\n<ul>\n<li>2 cups granulated sugar<\/li>\n<li>1\/2 cup butter<\/li>\n<li>4 oz cream cheese ( 1\/2 of an 8 oz block), softened<\/li>\n<li>3 large eggs<\/li>\n<li>1 large egg white<\/li>\n<li>3 cups all-Purpose flour, divided<\/li>\n<li>2 cups fresh or frozen blueberries<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>1\/2 teaspoon baking soda<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>\u00a01 (8 oz) container lemon yogurt<\/li>\n<li>2 teaspoons vanilla extract<\/li>\n<li>cooking spray<\/li>\n<li>1\/2 cup powdered sugar<\/li>\n<li>4 teaspoons lemon juice<\/li>\n<\/ul>\n<ol>\n<li>Preheat oven to 350 debrees<\/li>\n<li>beat first 3 ingredients at medium speed until well blended (about 5 minutes).\u00a0 Add eggs and egg white, 1 at a time, beating well after each addition.\u00a0 Lightly spoon flour into dry measuring cups, level with a knife.\u00a0 Combine 2 Tablespoons flour and blueberries in a small bowl and toss well.\u00a0 Combine remaining flour, baking powder, baking soda, and salt.\u00a0 Add flour mixture to sugar mixture alternately with yogurt, beginning and ending with flour mixture.\u00a0 Fold in blueberry mixture and vanilla, pour cake batter into a 10-inch tube pan coated with cooking spray.\u00a0 Bake at 350 for 1 hour and 10 minutes or until a wooden pick inserted in center comes out clean.<\/li>\n<li>Cool cake in pan 10 minutes; remove from pan.\u00a0 Combine powdered sugar and lemon juice in a small bowl.\u00a0 Drizzle over warm cake.\u00a0 Cut with a serrated knife.\u00a0 Yield:\u00a0 16 servings<\/li>\n<\/ol>\n<p>Notes:\u00a0 I just use 4 eggs.\u00a0 Last time I couldn&#8217;t find lemon yogurt, so I used 1 cup of plain Greek yogurt mixed with about 1 1\/2 Tablespoons lemon juice.
