Mrs. Walkup was my next door neighbor when we lived in the Brentwood subdivision in Raleigh. She says the secret to this cake is creaming the butter, shortening, and sugar until it looks like ice cream.
This is not a true pound cake because it has more than “a pound of butter, a pound of sugar, a pound of flour and a pound of eggs.”
- 2 sticks margarine or butter
- 1/2 C. shortening
- 3 C. Sugar
- 5 eggs
- 3 C. flour
- 1/2 t. baking powder
- pinch salt
- 1 C. milk
- 1 t. vanilla
- 1 t. almond extract
Cream the butter, shortening, and sugar well. Then add eggs, one at a time. Sift the flour, baking powder and salt together 3 times. Add the flour and milk alternately. Add flavorings.
Bake in a greased and floured tube pan at 325 for 1.5 hours.
